Salatat Banadura - Tomato Salad
Serves about 4.
- 4 medium ripe but firm tomatoes, diced into 1/2 inch cubes
- 1/2 cup finely chopped fresh coriander leaves
- 1 clove garlic, crushed
- 3 tablespoons olive oil
- 3 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- pinch cayenne
Place tomatoes in a salad bowl and set aside.
In a small bowl combine remaining ingredients. Pour over tomatoes, then toss just before serving.
