Garlic-Cucumber-Yogurt Salad
In summer this salad is a very refreshing dish. Serves 8.
- 2 cucumbers about 8 inches long each, peeled and halved lengthwise then thinly sliced
- 4 tablespoons finely chopped green garlic leaves or 2 cloves garlic, crushed
- 2 tablespoons finely chopped fresh mint
- 3 tablespoons olive oil
- 3 tablespoons vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 cups yogurt
Place cucumber slices in a salad bowl, then set aside. Combine remaining ingredients. Pour over cucumber slices, then toss. Chill before serving.
