Garlic-Cucumber-Yogurt Salad

In summer this salad is a very refreshing dish. Serves 8.

  • 2 cucumbers about 8 inches long each, peeled and halved lengthwise then thinly sliced
  • 4 tablespoons finely chopped green garlic leaves or 2 cloves garlic, crushed
  • 2 tablespoons finely chopped fresh mint
  • 3 tablespoons olive oil
  • 3 tablespoons vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups yogurt

Place cucumber slices in a salad bowl, then set aside. Combine remaining ingredients. Pour over cucumber slices, then toss. Chill before serving.
