Samak Maqli - Fried Fish

Serve with lemon slices and tartar sauce or garlic sauce and French fries. Serves about 4.

  • 2 pounds hamour (grouper) fillet
  • 2 tablespoons lemon juice
  • 1 1/2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 1/2 teaspoon ginger
  • 1/2 teaspoon cumin
  • 1/2 teaspoon ground coriander seeds
  • flour

Cut fish into 1/2 inch thick slices and set aside.

Combine remaining ingredients, except flour, then rub fish slices with this mixture and allow to-marinate for 30 minutes.

Roll fish slices in flour then deep-fry until golden brown – about 10 minutes, turning over once. Drain on paper towels then serve hot.
