Fish Soup - Shurba Hut
Serves 8 to 10.
- 2 tablespoons lemon juice
- 1 tablespoon grated fresh ginger
- 2 teaspoons salt
- 1 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1/2 teaspoon ground coriander seeds
- 1/2 teaspoon pepper
- 1 lb fish fillet (any type), cut into small pieces
- 4 tablespoons oil
- 1 large onion, finely chopped
- 1 small hot pepper, finely chopped
- 4 tablespoons tomato paste, diluted in 1-cup water
- 1/2 cup broken noodles
- 6 cups water
- 1 tablespoon dry mint
Combine lemon juice, ginger, salt, garlic, cumin, coriander and pepper, then mix with the fish and marinate for 1 hour. Heat oil in a saucepan then fry onion over medium heat for 10 minutes. Add, with the exception of mint, the remaining ingredients, including the marinated fish with its juices, and bring to boil. Cover and cook over medium heat for 30 minutes, stirring occasionally. Stir in the mint and serve.
