Fool Mudammas (Broad Bean Pottage)
- 1 cup dried broad beans (preferably the small rounded type), soaked overnight in water and drained
- 4 tablespoons olive oil
- 1 1/2 teaspoons salt
- 3/4 teaspoon pepper
- 3/4 teaspoon ground coriander seeds
- 3/4 teaspoon cumin
- 4 tablespoons lemon juice
- 2 cloves garlic, crushed
- 2 tablespoons finely chopped coriander leaves
Place broad beans in a pot, then cover to 2 inches above beans with water. Cover and bring to boil, then cook over medium heat for 1 1/2 hours or until beans are very tender, adding more water if necessary.
Drain beans and place in a serving bowl, then add 2 tablespoons of the olive oil, salt, pepper, coriander, cumin, lemon juice and garlic. Mix well until some of broad beans break.
Sprinkle with remaining oil, then garnish with coriander leaves and serve hot.
